Can I sharpen any knife with the GoalFlow rolling sharpener?
GoalFlow works with most knives, including kitchen knives, cleavers, most hunting knives with a smooth edge, and folding knives with a smooth edge. However, it is not suitable for serrated knives like bread knives or for scissors.
Can I sharpen damask knives with the GoalFLow Rolling Sharpener?
Knives forged from Damascus steel have a particularly high hardness, often raising concerns about how to resharpen such blades. GoalFlow’s high-efficiency diamond wheel, which is harder than Damascus steel, ensures that even these exquisite knives can be sharpened without damage. Can I sharpen my one-sided ground Japanes knife with Tumbler?
For Japanese knives, which are often sharpened on one side, GoalFlow’s magnetic holder allows for precise sharpening at either a 15-degree or 20-degree angle. The blade can be sharpened alternately from both sides, or only on one side if desired.
How do I sharpen knives that are taller than the sharpening disc?
For taller knives, like large Chinese chef’s knives, the GoalFlow Rolling Sharpener can be elevated using a cutting board to bring the grinder level with the cutting edge.
Is the GoalFlow Rolling Sharpener suitable for sharpening serrated knives, e.g. bread knives?
The GoalFlow Rolling Sharpener is not suitable for serrated blades, as it could grind off the serrations and damage the diamond sharpening disc.
What is the difference between the 15° and 20° degree sharpening angle?
A 20-degree angle provides a more robust edge, while a steeper 15-degree angle offers more precision. Before altering your knives, consider that Western knives, generally made with softer steel, may not hold a narrower 15-degree angle for long and will require more frequent sharpening if this angle is adopted. (Japanese knives, made from harder steel, retain a narrower edge longer.) Also, changing the angle from 20 degrees to 15 degrees will result in the gradual removal of more metal over time.
